Spiralized Summer Bowl Salad
I'm back!
It's been quite some time since I posted and now I am eating much healthier because I have been on Weight Watchers. I'm going to share a few great, low fat recipes and the best thing about them is that EVERYONE in the house has been enjoying them as well. Win/Win.
This one is a salad but much more interesting.
For the peanut sauce take 2 tbsps. of creamy peanut better, 2 tsps. of reduced sodium soy, 1 tsp. sriracha sauce, 1/2 tsp. grated ginger and some warm water to thin out the mixture if necessary. Mix all the ingredients and set aside in the fridge.
For those of you who have not zoodled anything - now is the time to buy the gadget. They are called spiralizers and they turn all veggies in to noodles. You can buy one for less than $10. A simple hand held one is fine for the everyday cook.
For the bowls themselves you will need to spiralize 2 English
cucumbers and 1 thick carrot (trust me when I say find a big carrot - I made
the mistake of using a regular one the first time and it really did not
spiralize) and also 1 cup of shredded red cabbage. Divide the vegetables
between 4 bowls. Then top with 6-8 cooked shrimp, 2 tbsp of the dressing
and a mixture of 1/4 cup of chopped cilantro, basil & mint. You could
also add chopped peanuts, I just didn't want the extra points. This is a really
light & refreshing meal for a warm summer night.
