Turkey Taco Squash Boats

My diet doesn't excuse me from Taco Tuesday so I found a really tasty way to incorporate the tacos in to my Weight Watchers plan.

Preheat the oven to 400.
Take 2 spaghetti squash and cut them in 1/2 lengthwise. Scrape out the seeds using a spoon.  Spray the inside with olive oil spray and lightly sprinkle with salt and pepper.  Place them face down on a baking sheet and bake for 50 minutes.

In the meantime brown 1 pound of ground turkey (I use the 93% fat free because the 99% is way too dry).  Season with 1 tsp. garlic powder, 1 tsp. cumin. 1 tsp. kosher salt, 1/2 tsp. chili powder, 1/2 tsp. paprika and 1/2 teaspoon oregano.  Add in 1 small minced onion, 1/4 cup chopped red bell pepper and 6 oz. tomato sauce.  Simmer for about 20 minutes.

Once the squash is cool, use a fork to scrape the inside to that the "spaghetti" strands appear.  Fill each 1/2 of the squash with about 1/2 cup of the meat mixture.  Top each with about 2 tbsp. low fat shredded cheddar and bake for another 5 minutes.

Excuse my half eaten dinner!
