Chicken Pad Thai Zoodles

The flavors in this dish are sooo good that you will forget you didn't use real noodles!

Season 1 pound of chicken (cut in to strips) with salt & pepper.  Heat 1 tablespoon of oil oil in a wok or large pan.  Add the chicken and cook for about 5 minutes until juices are clear, remove the chicken from the pan and set it aside.

In a small bowl whisk together In small bowl, whisk together 1 tbsp. honey, 2 tsps. chili garlic sauce, 3 tbsp. rice vinegar, 2 tbsp. soy sauce, 1 tbsp. peanut butter, and 1/4 cup water to make sauce.

Spiralize 2 medium zucchini and 2 medium carrots.  Add the zucchini, carrots and cooked chicken back in the pan and toss  with the sauce. Add in 1 cup of bean sprouts and 1 cup of shredded cabbage.

Serve in individual bowls garnished with cilantro, chopped peanuts (I skipped them because I don't need the extra points!)  & lime wedges.
