Crock Pot Sesame-Ginger Chicken
Everyone is always looking for new and yummy crock pot recipes. And really what could be easier than cooking in a crock pot? I recently came across this one which is so delicious! Heat a tablespoon of sesame oil in a pan and swirl to coat the bottom. Add chicken breast (whole) and cook 4 minutes on each side. I used a package of 5 full breasts, not the thin cut ones. Transfer these to the crock pot.
Combine 1/4 cup soy sauce, 2 tablespoons of brown sugar, 2 tablespoons of OJ, 1 tablespoon of minced garlic and 1 tablespoon of minced ginger in a small mixing bowl. Pour over the chicken breasts. Cook on low for 3-4 hours. Transfer the chicken to a plate.
Pour the liquids from the crock pot through a strainer in to a sauce pan until you have about 1-1/2 cups of liquid. Bring to a boil. In a small bowl combine 1 tablespoon of cold water and 1 tablespoon of cornstarch.
Add this to the sauce while whisking until it's all blended. Cook until the sauce gets thick, about 1 minute. Pour over the chicken and garnish it with sesame seeds and sliced scallions.
You could serve this over rice but I decided to sauté bok choy in some sesame oil, garlic and soy instead in an attempt to be a bit more healthy, ha ha!
