Chicken Piccata
You want fast and delicious? This is the meal for you. From start to finish this took under 1/2 hour tonight.
I have also used this same recipe on tilapia and sole.
I used a package of thinly sliced chicken breasts, which was 5 pieces. I dredged them in flour seasoned with salt and pepper. Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet. When the oil and butter start to sizzle add the chicken, cook until golden brown on each side which is about 5-6 minutes. Take the chicken out of the pan and put on a plate.
Add an additional tablespoon of olive oil and butter to the pan. Once butter melts add 1/4 cup of fresh lemon juice, 1/2 cup chicken stock and 2 tablespoons of capers. Most recipes call for draining and rinsing the capers. While I do drain them I don't actually rinse them because I like the briney flavor. Let this cook for about 4 minutes then add back the chicken and leave it melding in the flavors for about 5 minutes.
This is one of those recipes that tastes like it takes much longer than it does. It will become a go to for you!
