Valentine's Day Dinner
What did I do for Valentine's Day you ask?? Well what a romantic evening I had!!
I had twelve 12/13 year old boys over for the NBA All Star Slam Dunk Contest! What else would you think I would have done??
While I did actually have all those boys over I still managed to put together a nice dinner for Jorge and I. We had a stuffed salmon recipe that I would like to share.
I bought a 1-1/2 pound piece of salmon, and sliced it length wise down the center of the piece. Lay the salmon on a baking pan and seasoned it with salt & pepper.
I then sauteed 1/2 of a medium onion in a pan with olive oil. I added a bag of baby spinach to the pan, and cooked it until it wilted. I then added 1/2 teaspoon of nutmeg and salt & pepper to taste.
In a medium bowl I took 1/2 cup Marscapone cheese and 1/2 cup of cream cheese and blended it together. I added the spinach mixture to this and mixed it until it was all blended. I then laid this mixture in between the two layers of salmon.
In a small saute pan I melted 1/2 stick of butter and then added in 1/2 cup breadcrumbs and 1/4 cup Parmesan cheese and mixed it up.
You then spread a layer of this breadcrumb mixture over the top of the salmon.
Preheat the oven to 400 degrees and bake for about 15-20 minutes, I happen to like my salmon slightly on the under cooked side so this is actually perfect for me. Leave it in a bit longer if you want it well done.
For dessert we had Slutty Red Velvet Brownies. For those of you who aren't familiar with Slutty Brownies they are layers of cookie dough, oreos and brownies but for Valentine's Day I substituted the brownie layer with Red Velvet Cake. Very good!
