Taco Tuesday

We all have Taco Tuesday, right? 
Hard tacos, soft tacos, fiesta boats, taco ring (thanks to Shannon)...
One night I made chicken pot pie and Nicks says "Mom, I think you should try to make Taco Pot Pie".  Actually not a bad thought - and those of you who know Nick know that sometimes his thought process is askew but this time I think he was on to something!
So I run out the next day to gather my ingredients for this new culinary adventure.  Deep dish pie crust, Pillsbury rolled crust, ground Turkey, taco seasoning, onions, carrots, corn and cheddar cheese.  I chopped up the onions and carrot in the food processor so they are very finely minced (one of the only ways I can get the boys to eat any vegetables at all), saute that in olive oil and add in the ground turkey (since I was making 2 pies I used 2 packages), about 1/2 cup of water and 2 packages of taco seasoning.  Once it is cooked I add in a can of corn and about a cup of cheddar cheese.  I filled the deep dish pie crust with this mixture plus added some more cheddar on the top of the meat and then closed up the pie with the rolled crusts.
 I baked this at 375 for 35-40 minutes.  You can serve this with all the typical accoutrements - sour cream, shredded lettuce, diced tomatoes, sliced olives, sliced avocado, etc...
