Loaded Cauliflower Bake



5 months in to Weight Watchers and I am still always looking for creative and fun meals that keep me excited about the weight loss journey.  Last night I made a Loaded Cauliflower bake that was so good! I felt like I was eating Potato Skins.

First, take a head of cauliflower, cut it up and boil it for 15 minutes. Once it is cooked you can cut the florets in to smaller pieces.

In a large bowl mix 1/2 cup of fat free sour cream, 1/2 cup non-fat plain greek yogurt, 1 envelope of Ranch seasoning and 3 pieces of crumbled bacon (I used turkey) and 1/2 cup reduced fat shredded cheddar. Add in the cooked cauliflower and toss so that it gets covered with the cream mixture.

Spray a casserole dish with Pam Olive Oil and spread the cauliflower mixture in the pan. Top with 2 more slices of crumbled bacon and another 1/2 cup of the reduced fat cheese.

Bake at 375 for 20 minutes. Sprinkle with 2 tablespoons of chopped scallions.

Pure Heaven!
