Chicken Caprese
I will try to lay off the zoodle recipes for a while after this one.
This is another one that everyone in the house enjoyed.
In a large saute pan heat 1 tbsp. olive oil. Cut up 1 pound of boneless breasts in to 1/2" pieces and season with salt, pepper and oregano. Add in to hot pan and saute until browned and then set aside.
Reduce the heat to low and add in 3 cloves of minced garlic and saute until lightly browned, more like golden. Then add in 1 cup of cherry tomatoes that have been halved and a pinch of crushed red pepper flakes. Season with a little salt and pepper. Keep th heat low and cook tomatoes down for about 15 minutes.
Turn the heat back to high and add in 3 spiralized zucchini and 1/4 cup chopped basil and cook for about 2 minutes. If you cook the zucchini any longer than that it gets very watery.
Add the chicken back in and add in and about 1 cup of ciliegine mozzarella cut in 1/2 and quickly toss and take off the heat.
