Salmon Teriyaki Bowl

I took a long hiatus from creating new recipes over the summer but now I am back on track.

Preheat oven to 400. Take 2 - 1/2 pound pieces of salmon and lay them in a baking pan on either aluminum foil or parchment paper. Season with salt & pepper and then pour 1 tablespoon of teriyaki sauce on each filet. Bake for 12 minutes.
In the meantime you should prepare brown rice (I use a steamer and it takes about 15 minutes), chop 3 scallions, dice 1 avocado, and measure 1/2 cup of shredded carrots.
When salmon is done layer the bowl as follows: 1/2 cup brown rice, salmon, the scallions, carrots & avocado. Squeeze the juice of 1/4 lime and garnish with sesame seed. This is light, healthy & satisfying!
