Taco Empanadas
It was Homecoming weekend this past weekend. This means food, drink and football!
Had a little pre-game party with the crew which worked out very nicely. We all brought over picking foods. Back to the premise that all kids love tacos, I made taco empanadas!
Thaw out Goya empanada discs while following these steps. In the food processor I finely minced 1/2 onion and 1/2 cup carrots. Heat 2 tablespoons of oil in a large saucepan, saute the onions and carrots for about 5 minutes. Add in 2 pounds of ground turkey (note I used turkey but you can use chicken or beef too).
Add 2 packets of taco seasoning and 1/2 cup water and fully cook the meat. I added in aout a 1/2 cup of shredded cheddar in to the mixture as well.
Lay out the discs on the counter and spoon in a bout a 1-1/2 tablespoon of meat mixture in to the center of each disc. Also add a sprinkle of cheddar on top of the meat.
Fold the disc in half and crimp the edges closed. Then go over the edges with a fork, firmly pressing down around the empanada.
I use a deep fryer but you can also use a deep frying pan. Heat the oil for a leas 5 minutes and then add the empanadas in being careful not to overcrowd the frying basket or pan. I fry 5 at a time in the deep fryer until golden brown.
I suppose you can serve them with all the normal taco fixings but we didn't and they were gone in minutes!!
