Buffalo Chicken Meatballs
It's a given that everyone loves anything buffalo chicken!
I was going to a get together at a friends and tossing around ideas with her for things to serve,
so I thought Buffalo Chicken Meatballs!
Preheat the oven to 375.
In a large bowl start with two packages of ground chicken, add in 1/2 cup shredded carrots and 1/2 cup shredded celery (I put it through the food processor)
Add in 1/2 cup panko bread crumbs, 2 eggs, 1/2 teaspoon of garlic powder and 1/2 teaspoon of salt. I also added in a few dashes of Frank's hot sauce in to the meat.
Blend together by hand, but do not over mix it. Roll in to 1" meatballs and layout on a baking sheet lined with foil and sprayed with cooking spray. With two packages of chicken you should yield about 60 meatballs.
Bake for 20 minutes. While the metballs are baking, melt 1/2 stick of butter in a sauce pan and add in 3/4 cup of Franks hot sauce to the pan. Mix until blended. When the meatballs are done, pour the sauce over them and toss to coat.
Serve with blue cheese dressing on the side.
They were a hit!
